Because you don't read what Panasonic write "6K PHOTO is a high speed burst shooting function that cuts a still image out of a 4:3 or 3:2 video footage with 18-megapixel". The sensor does not have 6K pixels width.

4K in GH5 is already down sampled from full sensor. 6K photo will offer only 4:3 and 3:2 ratio, not 16:9.

The problem with 4K auto focus was not enough cpu power, its going to change with the GH5 plus much faster af sensor scan per second.

You are talking about two different kind of screen: the EVF is OLED based and the rear screen is LCD. If I remember correctly, you can adjust the tint and color of them to match.

As Panasonic already wrote, 6K photo will be available in 3:2 and 4:3 only and not in 16:9 as 4K photo is.

E M1 II has LCD evf, not OLED.

You dont have to guess, Panasonic official info says that. Up to 4K/30p is 10 bit internal. 4K/60p is 8 bit.

No, you've got the wrong conclusion. iDynamic in many time does clip highlights in order to show more contrasty image. So the test you brought is misleading.
