Travel camera for backpacking in central- and South America

Hi good people! 

I am planning on travelling for 6 months in the southern part of America next year, and I am keen on getting a new camera for this trip. 

Currently I have the Nikon D7100 with a Sigma 18-35mm and a nikkor 70-300mm which I used the last time I was travelling. I am looking for a camera with some better video specs. Slow-mo and image stabilization would be appreciated. 

I have come down to two options: sony a6500 and the panasonic gh 5. The main reason I am considering the a6500 is because I would still appreciate the stills quality of the aps-c sensor and the low light performance contra the gh 5. 

I am planning on shooting wildlife, surfing and daily culture. 

Any suggestions to other cameras?
